We just love coffee.  We believe in coffee, we brew coffee and we drink coffee.  Sometimes a lot of coffee.  Sometimes, maybe, too much coffee.  You can’t blame us, it’s delicious.

You might have noticed that we don’t run around topping off your coffee or offering warm ups.  This is a delicate issue for some, as diners often are known for their bottomless cups.  But perceptions and realities can change over time, and the reality is that this coffee we pour is not the coffee of the old school diner.  This is a dang good cup of coffee roasted by Counter Culture Coffee out of Durham, North Carolina and they work hard to bring us the best beans.  Counter Culture travels to the farms and forms both personal and business relationships with these farmers.  They call it direct trade.  It’s fair-trade’s more dedicated sibling.  They roast our coffee twice weekly for us.  Coffee, like any food, will deteriorate over time.  We only serve the freshest coffee.  The coffee you’re sipping now was likely roasted two or three days prior, ensuring the bean will give off all of its complexity when brewed.  Counter Culture also helps us maintain a consistent profile of our Tryst House blend while keeping it seasonally fresh by changing elements of the blend from time to time.  It takes a lot of work to bring a really good cup of coffee from farm to table, and we take a lot of pride in our coffee.  I guess we could offer a lesser quality cup, and have unlimited refills, but we don’t think you would want that and neither would we.

 



so what you are essentially saying is the coffee is so good and if you want free refills then f- off?  I’ve been to open city and they still refill the cup you just have to ask them to.

The coffee refill became popular when inexpensive commodity coffee was being served. There shouldn’t be an expectation that a cup of specialty coffee will be bottomless. There isn’t an expectation of refills of mac & cheese or a “warm ups” of soup.

We always try to accommodate our guests, and you’re always welcome to order another cup but we want everyone to understand that a lot of work and costs go into EACH cup we serve.
